
Aloo Bhujia
Aloo Bhujia is one of the most popular munchy snacks that can be had with tea or sprinkled on top of chaat items. Though easily available in the market from big brands and in a number of flavors, they are very easy to make at home. As with all homemade food items, the taste and flavors can be customized and adjusted. Made in a jiffy, these last for many days and can be made in huge batches.
Ingredients
- 60 grams Besan (sifted)
- 100 grams Potatoes (2 small sized, grated)
- ¼ teaspoon Garam Masala Powder
- ¼ teaspoon Turmeric Powder
- 1 pinch Hing
- ¼ teaspoon Chaat Masala or Amchoor Powder
- ½ teaspoon Red Chilli Powder
- Salt to taste
- Oil as needed
Instructions

Take the grated potatoes in a bowl or a plate.

Add besan.

Add the seasonings like salt, turmeric powder, garam masala powder, red chilli powder, hing, amchoor, or chaat masala.

With a light hand, knead by bringing everything together.

Roll gently in a log and lightly apply little oil all over it.

Place 2 cups of oil for heating in a thick bottom pan on low to medium flame.

Drop a small piece of the ready batter in the oil to check its temperature.

If it comes up quickly and color changes to light golden brown without burning, the oil is ready.

Grease a chakki maker and add the sev attachment (small holes).

Place the prepared log into it.

Very carefully start pressing the handle to push out sev strands directly into the hot oil.

Add as per the oil taken and the pan size without crowding it.

Fry till the color changes to golden brown on both sides.

Adjust the flame between low and medium so that the bhujia fries to a crisp texture.

Fry the rest of bhujias similarly.

Cool them completely and crush gently to get smaller size strands.

You can add additional flavors like mint, garlic, ajwain etc, as per taste preference.
