Dal Dhokli

Dal Dhokli can be rightly called a complete meal in itself. It is an authentic dish very popular in Rajasthan and Gujarat. It combines both the dal and the roti together with varied seasonings depending on taste, region, and cuisine. The Rajasthani version uses tur dal whereas the Gujarati one prefers moong dal. Of course, the Gujarati one is slightly sweet due to the addition of gur. As with any dish, one can adjust the taste as per choice, keeping the basic ingredients and method intact.

For the Dal

  • 1/2 cup Tur Dal (washed and soaked for 1 hour)
  • 1 pinch Hing
  • ¼ teaspoon Turmeric Powder
  • ½ teaspoon Red Chilli Powder
  • 1 Green Chilli (chopped)
  • 1 teaspoon Cumin Seeds
  • 2 Whole Red Chillies (broken)
  • 1 tablespoon Fresh Coriander Leaves (chopped finely)
  • 2 Dry Kokum Pieces
  • 1 tablespoon Oil
  • Water as needed

For the Dhokli

  • 1/2 cup Whole Wheat Flour
  • 1 tablespoon Besan
  • Salt as per taste
  • 1 teaspoon Oil
  • 1 pinch Hing
  • 1 pinch Ajwain
  • Water as needed to knead the dough


  1. To make the dal, drain the soaked tur dal and place in a pressure cooker.
  2. Add 1 cup water, salt to taste,1 pinch hing and the turmeric powder.

  3. Cook for 1 whistle on high flame.

  4. Let the pressure release on its own.

  5. Meanwhile, to make the dhokli knead a soft dough from the whole wheat flour and the besan.

  6. Add salt, hing, ajwain and 1 teaspoon oil while kneading.

  7. Rest it for 10 minutes.

  8. Now, divide it into equal size balls and roll each just like chapatis.

  9. With a sharp knife, cut each roti into 1-inch strips.

  10. Again cut each strip into two halves.

  11. These strips have to be added to the dal for cooking.

  12. Open the cooker lid and to the boiled dal, add the green chilli, kokum and 2 to 3 cups of water.

  13. Place it on medium flame.

  14. When it comes to a boil, add the dhokli strips, gently and one by one.

  15. Let them boil for about 15 to 20 minutes.

  16. With a light hand, stir them every few minutes.

  17. If the dal looks too thick, add more water.

  18. Cook to the consistency preferred and then shut off the flame.

  19. To temper, heat 1 tablespoon oil in a pan.

  20. Add the cumin seeds and the broken red chilies.

  21. Shut off the flame when the cumin seeds splutter.

  22. Pour over the ready dal mixture.

  23. Garnish with fresh coriander leaves.

  24. Serve hot as it will thicken and the dhokli will start to disintegrate on keeping for long.

  25. Additional seasonings like mustard seeds and curry leaves can also be added to the tempering.
