A combination of lentil curry and chapatti is not only good for health, but also makes you feel satiated for a longer time. No wonder, this has slowly become one of the most preferred lunch items to carry in the office tiffin. To top it all, its preparation time is quite less and the procedure is simple. So you can easily cook it in the morning.
Corn and Onion Tortilla Wrap
This wholesome wrap is easy to prepare and pack for lunch. Crispy red onions, soft golden corns, diced bell pepper, sliced carrots and sun-dried tomatoes filled in soft whole grain tortilla are sure to satisfy your taste buds and keep you healthy. It is a good idea to roast these vegetables rather than shallow frying them to avoid the intake of excess oil. Adding some shredded cheddar, red pepper sauce and garlic powder would enhance the taste further. This is one preparation that can even be had on your desk if you do not have enough time to head to the cafeteria for lunch.
Yet another healthy lunch idea, the Tofu Salad is full of nutritious vegetables that are rich in fiber, vitamins, minerals and various other micronutrients. While you may prepare your own version of tofu salad by mixing tofu with different vegetables of your own choice, it usually includes finely chopped bell peppers, onions, carrots and cilantro. Raisins, almonds, cloves and mayonnaise are added to enhance its taste. It tastes even better when had with whole wheat bread.
Vegetable and Tuna Pasta
There are various pasta preparations that can be had for lunch, however, this one tops the list if you are aiming to have something really healthy. The ingredients include arugula and chunk light tuna, broccoli, zucchini, baby spinach, sun-dried tomatoes and of course whole wheat pasta. Boil the pasta separately and add all the cooked vegetables in it. Stir gently and it is ready.
Chickpea Salad Sandwich
Chickpea is rich in proteins, fiber and minerals and is thus recommended by dietitians. Chickpea salad is not only healthy, but also tastes scrumptious. Other ingredients include chopped onions, ripe avocado, fresh spinach leaves, coriander and lettuce. Boil and mash chickpea and mix it well with the mentioned ingredients. Spread the salad on a slice of brown bread and top to prepare chickpea salad sandwich. You may add a layer of mustard sauce or tomato ketchup up and sprinkle some seasoning to add to its taste.
