A freshly baked sponge cake is simply irresistible. The aroma of a soft and homemade cake is truly enticing. You can bake easy and simple sponge cakes perfectly for your friends and family on special occasions or even on a busy weekday to simply enjoy with a hot cup of coffee or for your ever-hungry growing kids. Sponge cakes can also form the base of many other dessert recipes like truffle puddings and frosted cakes. So, here is the simplest method of baking a sponge cake at home.

How to Make a Cake
Any special occasion is incomplete without cake. Cake plays an important role in making someone feel special. Be it an adult or a kid, everyone simply cannot resist cake. Make your next celebration better by trying this simple cake recipe.
Ingredients
- 1 cup (100 grams) Maida
- 2 tsp Baking Powder
- 1 cup (100 grams) Sugar
- 2 Eggs
- 1 cup (100 grams) Butter

The first step is to sift the flours well so that they are aerated well. This is the secret hidden behind making a good and soft sponge cake. Take all dry ingredients in a sieve and sift them together in a bowl. Repeat this sifting five times to ensure that the flours get enough air in them.

In a separate wide-mouthed bowl, break the eggs, remove the yellow part and keep aside. Mix white part of egg and sugar well with a handheld electric mixer at high speed for about six minutes. By this time the mixture becomes fluffy and risen to three times its original volume. If you tap the bowl at this point from the bottom, it should give a hollow sound indicating that the mixture has lots of air in it now.

Take the butter and whisk the powdered sugar with it. It will become light and airy. Now add the yellow part of the eggs to the dry ingredients and mix well with butter mixture. Then fold in this mixture very gently with a spatula in the egg white and sugar mixture, carefully so that the mixture doesn’t lose its airiness.

Next, pour in the mixture into a greased spring fork based cake tin. Spin the bowl a few times on the work surface so that the cake’s surface becomes evened out.

Preheat an oven to 190 degrees C and put in the cake for baking for 20 minutes in the preheated oven.

For a simple yet delicious twist, you can cut the cake transversely into two halves and spread some soft cream and jam on the lower half. Now cover it with the top half and sprinkle the remaining castor sugar on the top surface.

You can now serve your soft freshly baked sponge cake and enjoy its delicious aroma that lingers on for a long time in the kitchen.
