If you ever go to, Chennai I suppose, one thing is for sure that your breakfast would definitely be dosa, idli and sambhar. Idli is a very light dish. And you will not feel lethargic even if you have some extra idlis just because of it’s delicious flavor and taste. Idli is equally loved in North India and you will find this in almost every restaurant’s menu. Though making idli is a lengthy process as preparing the batter takes a lot of time and you have to soak the ingredients.
Thanks to the north indian version of regular idli i.e. rawa idli. So, when the mood strikes for yummy, piping hot Idlis, but the batter has not been fermented overnight, turn to this easy, yet delicious Instant Idlis.

Instant Idli
Ingredients
- 1 cup Rawa
- 1/2 cup Fresh Curd
- Salt to taste
- 1/2 tsp Eno Fruit Salt
- Water as needed
Instructions

In a bowl, add the rawa and curd. Whisk them together.

Add in water little by little. Keep on whisking/mixing until a smooth, lump-free batter is formed.

Add salt and mix.

Now, take the idli steamer. Fill about 2 inches with water. Heat on full flame till it starts boiling.

Meanwhile, grease lightly the idli molds.

When the water starts boiling, add the Eno fruit salt to the batter. Give a few whisks quickly. The batter will bubble up.

Scoop out some batter and start filling the molds.

Put the molds for steaming.

Cover with the lid. Steam on full flame for 12 to 15 minutes. Remove when Idlis are done.

Take them out of the steamer. Let them stand for 5 minutes and then using the back of a knife, gently remove them.

Serve with coconut chutney.
