How to Make Mushroom Soup

Delicious mushroom soup can be had any time of the day. Rich in flavour and great for your health, mushroom soup is a mush have in your menu at least once a month.

Mushroom soup can be made in two ways. One is the simple mushroom soup that has a little thinner consistency. The second is the cream of mushroom soup which is creamy by nature and made extra creamy with generous servings of whipped cream.

Here I will take you through the recipe of a regular mushroom soup. Its made without a lot of fuss and can be done in less than half hour. You can use the regular white button mushrooms available in the market to make this soup.

  • 15 Mushrooms
  • 1 cup Milk
  • 1/2 cup Fresh Cream
  • 1 cup Water
  • 1 Onion
  • 1 Bay Leaf
  • 5 Garlic Pods
  • 1 tbsp Green Coriander Leaves
  • Salt to taste
  • 3/4 tsp Black Pepper Powder
  • 2 tbsp Butter
  • 1 tbsp Wheat Flour
  • 5 cups Water
  • 5 cups Cold Water


  1. Wash the mushrooms well in running water.
  2. Take 5 cups of water in a huge saucepan and bring it to a boil.

  3. Add the mushrooms and let them boil for a couple of minutes.

  4. Quickly drain them and add to the cold water. Let stand till they lose the heat.

  5. Again drain them and slice them thinly.

  6. Finely chop the onion, garlic pods, and green coriander leaves.

  7. Heat a nonstick pan. Toss in the butter and let it melt.

  8. Add the bay leaf, garlic, and onions. Saute until the onion turns soft.

  9. Add the mushroom slices. Cover with a lid. The mushrooms will leave the water.

  10. Let them cook till the water evaporates. Add the flour and stir-fry it so that it loses its raw smell.

  11. Mix together 1 cup water and milk. Slowly add to the pan.

  12. Stir a bit and cover again. Cook, till it reduces to almost half or till the desired soup consistency, is got.

  13. Season with salt and pepper powder. Whisk the cream and add to the soup.

  14. Garnish with green coriander leaves.

  15. Shut off the flame after one boil. Remove the bay leaf.

  16. Serve hot.

We all know that antioxidants are great for the body and mushrooms are full of it. Therefore, a mushroom soup rich in antioxidants works wonders when added to your regular diet. Besides, mushrooms are low in calories and extremely filling which also makes a good reason to add it to your diet.

In fact, mushroom soups are so popular that their ready-to-eat variety is now easily available in the market. All you need to do is boil it up in some hot water. This variety, again, is the cream of mushroom soup and not the regular one. While it does taste fine, we bet home made mushroom soup that you’ll lovingly make for your family will taste much better. After all, it’ll have a dash of love.

A variation – add a few  sautéed malabar spinach or poi leaves to the final soup as a topping. Great for health and good in taste too!
