Pudina (mint) has that unique fragrance and taste that brings a zing to whatever dish it is added to. Not only does it taste good, but also has numerous health benefits.

Pudina Tomato Chutney
Ingredients
- 1 bunch Pudina (chopped)
- 1 small Tomato (chopped)
- 1 tbsp Ghee
- 2 tsp Urad Dal
- 1 tsp Coriander Seeds (dhaniya)
- 1 tsp Jeera
- 1 small piece Hing
- 2 Green Chilli
- 1 tsp Tamarind Pulp
- 1 inch piece Ginger (chopped)
- Salt as required
Instructions

Prepare the ingredients for the chutney.

In a pan, heat ghee. Add urad dal. After the color changes to light brown, add dhaniya seeds, jeera, hing, ginger and green chillis.

Fry it for 2 minutes and keep it aside.

In the same pan add the pudina leaves and fry it for 2 minutes. Keep it aside.

Add a little oil to the pan and fry chopped tomatoes.

After all the ingredients cool down, blend them together in a mixie. Add the tamarind pulp and salt and blend it again.

Transfer the chutney from mixie into a bowl.

Make chutney sandwich or eat with hot bhajiyas.
