Sago Khichdi (Sabudana Khichdi)
- 1 cup Sabudana
- 1 medium-size Potato
- 1/4 cup Peanuts
- 1 tsp Jeera
- Salt to taste
- 1 Green Chilli
- 10 Curry Leaves
- 1/4 tsp Red Chilli Powder
- 2 tbsp Oil
- Water as needed
Wash and soak the sabudana overnight.The water level should be about 2 cm above the sabudana.
Next morning, the sabudana will have absorbed the water and turned plumpy and soft.
Chop the potatoes into very small pieces and finely chop the green chilli.
In a thick bottom pan, heat the oil on the slow flame.
Add in the peanuts and fry till crunchy.
Remove and crush coarsely and keep aside.
In the same oil, add in the potatoes and fry them till done and crunchy.
Add in the jeera, curry leaves and green chilli and shallow fry for 1 minute.
Add in the Sago and toss in the salt and red chilli powder.
Mix well and cook for a couple of minutes only.
While serving, add in the fried peanuts.
