Schezwan Noodles with Manchurian balls in Samosa shells

A unique, fusion recipe that can easily be served as a starter.

Ingredients

  • 1 cup Maida
  • 2 tbsp Ghee
  • Salt to taste
  • 1/2 tsp Roasted Jeera
  • Ice Cold Water as needed
  • 200 grams Hakka Noodles
  • 1/2 tsp Black Pepper Powder
  • Oil as needed
  • 1 cup Cabbage (Shredded)
  • 1 Carrot Grated
  • 1 Onion Sliced
  • 1 tsp Ginger Garlic Paste
  • 1 tsp Schezwan Chutney
  • 1 tsp Red Chilli Sauce
  • 1 tsp Apple Cider Vinegar

Instructions

For Samosa shells

  1. Take the maida and add tablespoon ghee and salt to taste.
  2. Using the fingertips, crumble up to flour. Add jeera, little ice cold water and knead a tight dough.

  3. Cover with moist cloth and rest for 30 minutes.

  4. Roll out small puris and prick all over with a fork.

  5. Lightly grease the cupcake molds.
  6. Shape in cupcake molds and bake / deep fry till golden brown.

  7. Let cool before de-molding.

Schezwan Noodles

  1. Boil the Hakka noodles in 2 glasses of water till almost done. Add 1 teaspoon oil and salt while boiling.

  2. Drain and wash 3 times with ice-cold water.

  3. In oil, fry garlic, add very thinly sliced onions, cabbage, capsicum, and carrot. Keep the flame high to make the vegetables crunchy

  4. Add Schezwan chutney, salt, red chilli sauce and vinegar.

  5. Add in the boiled noodles.
  6. Mix well and keep aside.

Manchurian Balls

  1. Take the grated cabbage and add little-grated carrot and very finely chopped capsicum.

  2. Add salt, little ginger garlic paste, green chillies.

  3. Add little red chilli sauce.

  4. Using breadcrumbs and cornflour, bring it all together.

  5. Make small balls and deep fry till golden brown.

How to Serve.

  1. In each Samosa Shell, add in 1 tablespoon Noodles and place one Manchurian ball on top.

  2. Ready all shells like this and garnish with spring onion.
  3. Serve immediately.
