Shrikhand is basically hung curd sweetened with sugar and flavoured with elaichi, with additional ingredients added for variations. It is an integral part of both Maharashtrian and Gujarati cuisine. It is offered as a “Naivedya” in prayers in the Maharashtrian culture. No important celebratory meal can be complete without this easy, yet super delicious delicacy. Subtle flavours of kesar, elaichi and garnish of pistas add to its rich taste.

  • 500 grams Curd
  • ¼ teaspoon Elaichi Powder
  • Few Saffron Strands (soaked in 1 tablespoon warm milk)
  • 1 teaspoon Pistas (coarsely powdered)
  • 6 tablespoons Sugar (powdered (Adjust as needed))


  1. Place a sieve in a deep bowl.

  2. The bowl has to be deep so that the whey to be collected does not touch the base of the sieve in which the curd will be placed.

  3. Arrange a muslin cloth on it.

  4. Pour the curd into it and place it overnight in the fridge so that its moisture drains off completely to get thick, hung curd.

  5. The whey thus obtained can be used to make dals, soups or even to knead chapati dough.

  6. Meanwhile, the thick curd called ‘Chakka‘ thus obtained is collected in a bowl.

  7. Add elaichi powder, saffron soaked-milk, and the sugar.

  8. With an electric beater, whisk for a couple of minutes to get a smooth paste.

  9. Garnish with powdered pistas and chill till serving time.

  10. This Shrikhand can be stored in the fridge for about a week when kept in an airtight container.

  11. Use a dry spoon to remove as needed.

  12. Double the quantity of the ingredients to get a bigger batch
