Vermicelli Upma
One of the very loved and healthy breakfasts is the Vermicelli Upma. Generally, Upma is made from rava but its healthier versions include Oats Upma and Vermicelli Upma. Vermicelli can be either the whole wheat or the regular Maida one. Add a number of vegetables of your choice and healthify it further.
Ingredients
- 100 grams Vermicelli (Whole Wheat or Regular)
- 200 ml Water (2 to 2 ½ times of the vermicelli)
- 1 big Onion (finely chopped)
- 1 tablespoon Urad Dal
- 10 Cashew Nuts
- 1 teaspoon Mustard Seeds
- ¼ teaspoon Turmeric Powder
- ½ teaspoon Red Chilli Powder
- Salt as per taste
- 10 Fresh Curry Leaves
- 1 Green Chilli (chopped finely)
- 1 teaspoon Lemon Juice
- 2 tablespoons Oil or Ghee
- 1 cup Carrot Cubes and Peas (boiled)
- 1 tablespoon Fresh Coriander Leaves (chopped finely)
Instructions

Heat the oil in a thick bottom pan on low heat.

Add the vermicelli and shallow fry till the color changes to light golden color (About 2 minutes).

Stir continuously so that it does not burn.

Remove with a slotted spoon and in the same pan, add the cashew nuts.

Fry them till they turn golden brown and remove aside.

Again, continuing in the same pan add urad dal, mustard seeds, curry leaves and green chilli.

When the mustard seeds splutter and urad dal gets fried, add the chopped onions.

Let them cook till they turn translucent.

Add the seasonings like salt, red chilli powder, and turmeric powder.

Now, add about two or two and a half times amount of water comparing to the quantity of vermicelli taken.

Increase flame to high.

When the water starts boiling, add the boiled carrot cubes, peas, and fried vermicelli.

Lower the flame and cover it with a lid.

Cook till the water is completely absorbed and vermicelli gets soft.

Sprinkle the lemon juice and mix well.

Shut off the flame and garnish it with the cashew nuts and green coriander leaves.

Serve hot.

The quantity of water depends on the type, variant, and quality of the vermicelli. So adjust accordingly.

As a general rule, the whole wheat, thick vermicelli needs almost 2 and ½ times water and the maida vermicelli needs 2 times water.
