Atta halwa, also called Kandaan ( कण्डा) Prasad is an offering in all GuruDwaras after the prayers. Every Punjabi and Sindhi home makes it for Guru Nanak Dev Ji’s birthday ( Gurpurab ). It is often made to satiate the sweet carvings as it comes together easily and tastes delicious. Adding slivered almonds and cashew nuts are optional though they do add to its rich flavor. It generally uses all the three ingredients, flour, sugar and the ghee in equal proportion by weight and thrice the measure of water. Although, for health issues, the quantity of ghee can be reduced marginally. But it does affect the taste.
Add the ghee and let it melt.
Put in the flour and start stir frying it continuously, without stopping for about 20 to 25 minutes till the flour changes color to deep golden brown.
The flour will gradually darken and give a very pleasant aroma as it keeps on frying.
Meanwhile, simultaneously, mix the sugar and the water in a pan.
Heat them till the sugar dissolves.
Add the elaichi powder to it.
At the point where the flour is fried, add the water and sugar solution.
The flour will start spluttering and start soaking up the liquid.
It will also leave the sides and the bottom.
Shut off the flame and cover with a lid for about 5 minutes.
Garnish with the slivered almonds and serve hot
The quantity of ingredients can be reduced or increased keeping the ratio same.
